Cove Cuisine Jellies & Jams

Datil Pepper Jelly
From the Cove Garden, this is one spicy treat! Enjoy it with Cream Cheese!
Prep Time: 30 min ~ Cook Time: 18 min ~ Servings: 5 1/2 half-pints

Ingredients:
- 1/3 cup Datil Peppers puréed ( 18 peppers )
- 1 cup Red Bell Peppers, puréed
- 6 cups sugar
- 1 1/2 cups Apple Cider Vinegar
- 2 packages Certo liquid Pectin
- 1/2 TBS Butter

Instructions:
- In a blender, Puree the Datil and Red Bell Peppers with 1/2 cup of the apple cider vinegar.
- Pour both packages of Pectin over the bottom of the Pot fitted with the stirrer
- Add pureed peppers evenly over pectin and pour the remaining vinegar of the peppers. Add butter to reduce foaming
- Press the Jelly button and set the time for 18 minutes and press enter
- After four minutes and four short beeps, gradually add sugar, one cup at a time, and make sure the sugar is dispersed. Place lid on Pot
- When finished with the cycle, press cancel, unplug and remove the lid
- Remove the stirrer from the pot, skim foam if necessary and fill jars. Process for 10 minutes
