Green Bean Parisienne

Green Bean Parisienne. Fresh from the garden,  full of zesty flavor!

Prep Time:  20 min  ~  Cook Time: 10 min  ~  Servings: 4-6


  • pounds of Green Beans
  • clove Garlic, minced
  • to taste Coarse Salt, Freshly ground Black Pepper
  • tablespoon Dijon Mustard
  • tablespoons Red Wine Vinegar
  • tablespoons Olive Oil
  • tablespoons Fresh Tarragon, chopped
  • 1/2 cup Parsley
  • 1/2 pound Swiss or Gruyere Cheese, shredded


  • Leave green beans whole and steam until crisp and still green…a couple of minutes
  • Placed steamed beans in cold ice water to stop cooking. Meanwhile, whisk together the remaining ingredients except for the cheese.
  • Toss the cooled beans into the vinaigrette and sprinkle with the cheese
