
A Cove Cuisine Appetizer

Crab Cakes
Packed with a lot of flavor and light on the filling!
Prep Time: 30 min ~ Cook Time: 8 min ~ Servings: 4-6

Ingredients:
- 1 pound Crab Meat, picked free of shells
- 1/3 cup Ritz Crackers, crushed
- 3 mediums Green Onions, finely chopped
- 1/2 cup Red Bell Pepper, finely chopped
- 1/4 cup Dukes Mayonaise
- 1 medium Farm Fresh Egg
- 2 tablespoons Fresh Parsley, chopped
- 1 tablespoon Fresh Tarragon Leaves, chopped
- 1/2 bunch Fresh Chives, finely chopped
- 1 teaspoon Worcestershire Sauce
- 1 teaspoon Dry Mustard
- 1/2 medium Lemon, juiced
- 1/4 teaspoon Garlic Powder
- 1 teaspoon Koshar Salt
- 1 pinch Cayenne Pepper
- 1 handful Flour
- 1/2 cup Peanut Oil
- 2 tablespoons Unsalted Butter

Instructions:
- In a large bowl, mix together all ingredients, except for the flour and peanut oil. Shape into patties and dust with flour.
- Heat oil in a large skillet over medium heat. When oil is hot, carefully place crab cakes, in batches, in a pan and fry until browned, about 4 to 5 minutes. Carefully flip crab cakes and fry on the other side until golden brown, about 4 minutes. Serve warm with the preferred sauce before serving
